Sheltered by the Teviotdale Hills and blessed with long, even growing seasons, it’s a dream spot for cool‑climate varietals, with Pinot Noir and Riesling being the local heroes.
What makes Waipara extra special is the people behind the vines. Many of the vineyards here are locally and privately owned, with families and small producers pouring their heart into every block. It’s a region where you can taste the place and the people - authentic, welcoming, and proudly Canterbury.

After taking over the business from Giles in 2026, I’m proud to carry that legacy forward - keeping the tours informative yet relaxed, personal, and full of the local charm that makes this region so special.
I’m all about small groups, genuine connections, and showcasing the family‑owned vineyards that give Waipara its heart. No big buses, no rushed schedules, no stiff scripts - just a welcoming, local experience where you can slow down, try some delicious wines, and enjoy the region at its best.

Meet Paul

I’ve spent more than 30 years in and around the wine trade, ever since a curiosity in my youth turned into a full‑blown love affair with all things vinous. It started with hospitality stints woven through my studies and travels, followed by harvest work in Burgundy, and eventually two decades in fine‑wine retail. Wine has always been a strong thread running through my life - and it’s fair to say I absolutely love it.
Over the years, I’ve developed a pretty good nose for a great drop, and an even better feel for what makes a memorable wine experience. Now, with Giles Tours, I get to share that passion with others in a place that’s truly special.
